Yeast ±25g
Salt 2 g
Water 630 g


Mix all the ingredients together at low speed for 3 minutes and then switch to high speed for 3-4 minutes until you get a well developed, stretchy dough.

Allow the dough to rest for 10 minutes.

Cut the dough into preferable portions. Indicative portions: 400 gr

Allow the cut dough to rest for 10 minutes.

Mould and proof for 35-40 minutes.

Bake at 210°C for 35 minutes.
