Wholegrain Dinkel bread

With wholegrain spelt flakes, sunflower seeds and wholegrain Dinkel sourdough.

Dinkel Vollkorn Pur 400 g
Dinkel Vollkorn Extra 600 g
Yeast 20 g
Water 720 g


    Mix all the ingredients together at low speed for 5-6 minutes and then switch to high speed for 3-4 minutes.

    Allow the dough to rest for 25-30 minutes.

    Cut the dough into preferable portions. Indicative portions: 575 gr.

    Allow the cut dough to rest for 10 minutes.

    Mould, decorate with sesame and proof for 35-40 minutes.

    Bake at 210-220°C for 45-50 minutes.
