Raisin Bread

Fragrant raisin bread with a blend of orange, vanilla and cinnamon.

Eggs 200 g
Yeast 320 g
Water (moderate temperature) 800 g
Sugar 200 g
Vanilla 1 g
Raisins 300 - 400 g
Cinnamon 20 g
Orange shavings 20 g


    Mix all the base ingredients together at low speed for 5 minutes.

    Allow the dough to rest for 20 minutes, once you have covered it with plastic sheet.

    Cut the dough into 50 g portions (small raisins bread bites) or 100 g (large raisins bread snacks)

    Proof (±35oC/60% moistness) for 40 minutes.

    Coat with egg wash or Ovex Powder-ZK (egg wash replacer).

    Bake at 210oC without steam for 15-20 minutes.
