Corn Brioche

Puffed, popped and packed with corn taste. - Panomix Corn PDR

Strong Flour T70% 1.500 gr
Margarine Princess 200 gr
Fresh Yeast 180 gr
Eggs 300 gr
Sugar 200 gr
Water 1.300 gr
Ovex Powder extra ingredients
Decoration Corn extra ingredients

Preparation

    Mix all the ingredients together for 3 minutes at low speed and then for 5 minutes at high speed.

    Allow the dough to rest for 10 minutes.

    Cut the dough into preferable portions and round them up.

    Proof (35°C with moistness) for 25-35 minutes.

    Cover the surface with Ovex Powder (egg wash replacer) or egg wash.

    Decorate with Decoration Corn.

    Bake small portions for 8-9 minutes and the large portions for 10-12 minutes at 230°C.
