Water (cold) 1.110 gr brioche ingredients
Bechamel GR 200 gr filling ingredients
Water 500 gr filling ingredients
Salt 4 gr filling ingredients
Philadelphia Cream Cheese 700 gr filling ingredients
Turkey 250 gr filling ingredients
Red Pepper 3 pcs. filling ingredients
Seedmix extra ingredients
Sesame extra ingredients

Preparation

    Brioche dough:
    Mix all the ingredients together at low speed for 3 minutes and then switch to high speed for 7 minutes until you get a stretchy dough.

    Allow the dough to rest for 10 minutes once you have covered it with a plastic sheet.

    Mould into preferable shapes and weight.

    Decorate with Seedmix and sesame.

    Proof (±35°C/70% moistness) for 20-25 minutes.

    Spread egg wash or Ovex Powder-ZK (egg wash replacer) onto the surface.

    Bake at 220-230°C for 15 minutes.

    Filling:

    Use the wire whisk to mix the  Bechamel GR, the water and the salt together at high speed for 3 minutes.

    Add the Philadelphia cream cheese and mix for 2 minutes and then add the final filling ingredients and mix until they are all well blended.
