Rye grissini with bacon and kefalotyri cheese

Panomix Roggopan 1.500 gr
Strong Wheat Flour 1.500 gr
Margarine Princess 300 gr
Oil 350 gr
Wine 900 gr
Sugar 120 gr
Cognac 100 gr
Regal (baking powder) 60 gr
Water 200 gr
Bacon (chopped) 250 gr
Kefalotyri cheese (grated) 150 gr

Preparation

Mix all the ingredients together, except for the bacon and kefalotyri, for about 4 minutes, at slow speed in a fast mixer or in a pastry mixer with the hook, until a layered uniform dough is formed. Finally, add the bacon and kefalotyri to the mixture and knead for 1-2 minutes until incorporated into the dough.

Shape the dough into "fuse“ shapes about 1 cm thick or at will.

Soak with water and decorate the breadsticks with sesame seeds.

Bake at 220 °C for 20 minutes, without steam, making sure during the last 5 minutes of baking the breadsticks "drain" well (damper open).
